With one of the most difficult weeks of school yet over, I finally have the time again to try new recipes and get back to being creative. This week has been incredibly busy since Danielle, our friend and I have been preparing for the advertisement of our health and nutrition club at our schools club fair, plus three tests to study for and the usual amount of homework. Through it all however, I have found ways to stay healthy like pre making breakfast the night before and incorporating social time and workout time so I don’t have to sacrifice one or the other. I bought some beautiful looking avocados from the store the other day and really wanted to try out a raw chocolate avocado mousse that I have seen multiple times on various websites. This mousse turned out delicious and perfectly soft and creamy.
The ingredients list was super simple comprised of
- 1 large ripe avocado
- 1/3 cup cocoa powder
- 1/4 cup almond or soy milk
- 1 tbs vanilla
- 3 tbs honey or other sweetener
Avocados, although high in fat, are a good source of vitamins and are a good food to eat in your basic diet although in moderation.
Blend avocado together until smooth, add milk, cocoa powder, almond milk, vanilla and honey and blend together until completely incorporated. Spoon into bowl and let chill in refrigerator at least an hour. Then eat and enjoy the yumminess!
