Veggie Power Bowl

DSC_0072One of my favorite lunch/dinner meals is this flavor packed veggie power bowl filled with tons of protein and nutrients. Half of this bowl is cooked and half is completely raw with no dressing or added oils. The cooked part is comprised of-

  • 2 heaping cups chopped kale and collards
  • 1 medium zucchini
  • 4 oz extra firm savory tofu (can easily be unflavored)
  • sesame oil
  • chili sauce
  • tabasco sauce
  • soy sauce
  • garlic powder


DSC_0069Pour a tiny bit of sesame oil and heat a pan on medium heat. Sauté the chopped zucchini for a few minutes then add the greens mix and finally the tofu. Pour the sauce over all and cook until soft and tender. For the raw portion it can be any type of fresh greens and other salad veggies. For this bowl I used an organic baby spring mix, chopped purple cabbage, cucumber, red bell peppers and some leftover red quinoa.


This bowl has about 20g of protein, tons of iron, calcium and the whole range of vitamins. The perfect mid day meal to make it through the afternoon 🙂
