Apples and Roses: Mini Apple Pies

I took on a bit of an ambitious dessert for Thanksgiving this year… and to be honest, these beauties took hours to make. But ultimately, when the mini apple pies came out of the oven looking like little roses, all the work was completely worth it! If you have some time and inspiration on a lazy sunday, take a shot at this recipe. Your friends and family will definitely be impressed with the result!

Ingredients: Makes 24 pies

  • 4 Granny Smith apples
  • 3 Honey Crisp apples
  • Cinnamon
  • Nutmeg
  • Brown sugar
  • Butter
  • 2 sheets of puff pastry
  • Lemon

Start off by peeling the Granny Smith apples and dicing them as shown above. Squirt some lemon juice as you prepare the rest of the recipe so that the apples don’t turn brown. Put the cut apples in a bowl and add cinnamon and nutmeg to your liking.

Next, take your Honey Crisps (any type of red apply will do) and peel them with a vegetable peeler as shown above. Put the moon-shaped slices in a microwaveable bowl and pour a mixture of melted butter and brown sugar over them. Microwave for 30 seconds, or until the apple slices are easy to work with. Then, line up the apple slivers as shown above in a line, and roll them starting at the edge. Whala! You get a beautiful rose!

Using a cup, make circles out of your puff pastry and and place the cut-outs into a muffin tin. Layer the bottom with the diced Granny Smith apples, place a rose on top, and then surround the flower with a few extra pieces of diced apples. Bake the pies for about 25 minutes at 375ºF.
